Spring Recipe 1: Asparagus and Pea Risotto with Lemon Zest
Risotto is a classic comfort food that transforms beautifully with spring vegetables. This version highlights tender asparagus and sweet peas, brightened by lemon zest and fresh herbs.
Ingredients
1 cup Arborio rice
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 cup fresh or frozen peas
1 small onion, finely chopped
3 cloves garlic, minced
4 cups vegetable broth, warmed
1/2 cup dry white wine (such as Sauvignon Blanc)
1/2 cup grated Parmesan cheese
Zest of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large pan over medium heat. Add onion and garlic, cooking until translucent.
Stir in Arborio rice and toast for 2 minutes.
Pour in white wine and cook until mostly absorbed.
Add warm broth one ladle at a time, stirring frequently, allowing liquid to absorb before adding more.
When rice is halfway cooked (about 10 minutes), add asparagus and peas.
Continue adding broth until rice is creamy and tender, about 18-20 minutes total.
Remove from heat, stir in Parmesan cheese and lemon zest. Season with salt and pepper.
Garnish with fresh parsley before serving.
Wine Pairing: Sauvignon Blanc
Sauvignon Blanc’s crisp acidity and citrus notes complement the lemon zest and fresh vegetables in the risotto. Its herbal undertones echo the parsley and asparagus, creating a harmonious balance.
Spring Recipe 2: Herb-Crusted Lamb Chops with Mint Yogurt Sauce
Lamb is a spring favorite, especially when paired with fresh herbs and a cooling sauce. This recipe uses a simple herb crust and a tangy mint yogurt sauce to highlight the meat’s natural flavors.
Ingredients
8 lamb chops
2 tablespoons olive oil
1/4 cup fresh rosemary, finely chopped
1/4 cup fresh thyme, finely chopped
3 cloves garlic, minced
Salt and pepper to taste
Mint Yogurt Sauce:
1 cup Greek yogurt
2 tablespoons fresh mint, chopped
1 tablespoon lemon juice
Salt to taste
Instructions
Preheat oven to 400°F (200°C).
Mix rosemary, thyme, garlic, salt, and pepper with olive oil to form a paste.
Rub the herb mixture onto both sides of the lamb chops.
Heat a skillet over medium-high heat and sear lamb chops for 2 minutes per side.
Transfer skillet to the oven and roast for 6-8 minutes for medium-rare.
Meanwhile, combine yogurt, mint, lemon juice, and salt in a bowl. Chill until ready to serve.
Serve lamb chops with a dollop of mint yogurt sauce.
Wine Pairing: Pinot Noir
Pinot Noir’s light to medium body and bright red fruit flavors match the delicate herbs and tender lamb without overpowering. Its subtle earthiness complements the rosemary and thyme crust.
Sneak Peek at Summer: Grilled Peach Salad with Burrata and Rosé
As summer approaches, fresh stone fruits and light cheeses take center stage. Imagine juicy grilled peaches paired with creamy burrata, arugula, and a drizzle of honey. This salad pairs beautifully with a chilled dry rosé, which enhances the fruit’s sweetness and balances the cheese’s richness.
